(উচ্ছে) Aloo Chorchori/ Karele ki Sabzi
If you are not a Bengali like me, probably you never heard of
this term “Chorchori”. Chorchori is
basically a vegetable dish from Bengal, made with variety of vegetables. This
is a quick, light, less spicy and easy to make vegetable preparation and
healthier too due to stir frying method. There is a wide variety of Chorchori exits in
Bengal’s household. But today’s recipe is with bitter gourd/uchche generally
known as “Teto Chorchori”. So let’s make it together J
Ingredients:
1 medium size bitter gourd/uchchhe/ Karela
2 small potatoes cut into small pieces
1 small aubergine/eggplant cut into small pieces
1 small onion finely sliced (you can omit it)
1 tsp. Panch foron/Bengali five spices
½ tsp. turmeric powder
½ tsp. red chili powder
Pinch of garam masala powder
1 tsp. sugar
Salt as per teste
Mustard oil
Method:
1. Spray some salt over bitter gourd pieces.
2. Fry them very well with some turmeric powder until they have
some brown spot. Keep it aside.
3. In the same pan, add some more mustard oil. Add panch
foron
or Bengali spices. Let them splutter for a few seconds.
4. Add thinly sliced onion and fry them until translucent. Add
remaining turmeric powder, red chili powder, salt and sugar. Saute it for 1-2 minutes.
5. Add potatoes and eggplant pieces to the oil. Mix it. If you
require some water feel free to add some splash of water if it gets dry (but
not to much). It should be dry preparation.
6. Cover and cook until it becomes tender. Check in between and continuously stir fry it.
7. After 5-6 minutes add the fried bitter gourd and mix it
properly.
8. Cover and cook until veggies are fully cooked. Finish of with garam masala powder.
9. Our Uchchhe Aloo Chorchori/Karele
ki sabzi is ready. Serve it with some plain rice. Enjoy J
