Chicken Chaap is a mughal inspired very famous aromatic preparation of Calcutta. Chicken Chaap with Mutton Biriyani is out of heaven combo dish. But it teste as good with Naan, Roti and Paratha. It is a very less spicy but very aromatic dish due to use of mitha attar, kewra water and rose water. Here leg pieces of chicken cooked in slow fire in very thick curd, ginger garlic, cashew nut paste gravy.

Ingredients:

grms chicken leg (2legs with thigh)

tablespoon onion paste 1 tablespoon ginger paste 1 teaspoon garlic paste make a
paste out of three

1
tablespoon shattu or roasted gram flour
·
1
tablespoon hanged curd or 2 tablespoon normal whisked curd
·
1
tablespoon sahi garam masala or chaap spice powder
· 1 teaspoon chilli powder (mild/kashmiri)
·
½ tsp
melon seed, 1tbsp cashew and 1tsp khoya. Make a paste out of three together
·
Pinch
of turmeric
·
1 tsp
kewra water
·
Little
rose water (I dint have it )
·
A drop
of mitha atar
·
Salt and sugar as per taste
Method
Method
1. Marinate the
chicken pieces with salt, sugar, red chili powder, roasted gram flour, ginger
garlic onion paste, turmeric, sahi garam masala and whisked curd. Mix it properly
and let it rest at least 2 hours.
2. Add oil in the
pan add the marinated chicken pieces into the hot oil and simmer it for 10
mins.
3. Add excess
marination gravy to it and mix it and cover and cook for 15 mins over low flame
4. Add melon seed,
cashew paste and khoya paste to it and cover and cook for 15 minutes
5. Turn off the
heat and finish off with mitha attar, rose water, kewra water, pinch of sahi
garam masala and ghee mix it and cover it for ten minutes.
6. Chicken Chaap
is ready to serve. Serve with some Naan, Roti, Paratha or Biriyani. Enjoy :)
